Ingredients:

3 lg Chicken Breasts
1-2 cups Pina Colada Mix (non-alcholic)
1 cup BBQ Sauce (Original or Honey Flavored)
Onion Powder
Garlic Salt
Salt
Season all
Pepper
Rice

Directions:

Fillet or Butterfly chicken breasts, then slice lengthwise into strips (cut larger strips in half).

In a bowl, mix pina colada, bbq sauce, and water so that the marinate will cover chicken, but not watery. add several shakes of onion powder, garlic salt and season all, stirring well. Drop in chicken strips and marinate for several hours.

Over high heat, cook marinated strips until done (use some of the marinate as a steam producer for softer texture). Once chicken is done, use 1/2 to 1 cup marinate to loosen up stuck chicken bits, add a touch of flour and mix until sauce is formed. Coat strips with half of sauce.

Cook rice.

Plating:

On clean plate, add 1 - 1 1/2 cups rice, gently spoon a portion of chicken strips into center, drizzle remainder of sauce over chicken and rice. Salt and pepper to taste.

add rum to rest of pina colada mix and drown out the day.
